Hearty Libyan Hot Soup (Libi Shorba)

A traditional Libyan delight, Libi Shorba is a robust and warming soup that captures the essence of North African cuisine. Ingredients

๐Ÿฅฉ 250 gms Mutton, small, non-minced pieces
๐Ÿ 1/2 cup Orzo Pasta, or smallest macaroni pasta
๐Ÿ… 3 tablespoons Tomato Paste
๐ŸŒฟ 1/2 cup Parsley, chopped; split portion
๐Ÿƒ 1/2 cup Coriander, chopped; split portion
๐Ÿง… 1 medium Onion, finely chopped
๐Ÿง„ 4-5 cloves Garlic, finely chopped
๐ŸŒถ๏ธ 3 Green Chillies, finely chopped
๐ŸŒฟ 1 1/2 teaspoon Coriander Powder
๐ŸŒฑ 1 teaspoon Turmeric Powder
๐ŸŒถ๏ธ 1 1/2 teaspoon Paprika Powder
๐Ÿง‚ 1 1/2 teaspoon Salt, adjust to taste
๐Ÿ… 2 Tomatoes, finely chopped
๐Ÿซ’ 3-4 tablespoons Moro Organic Olive Oil
๐Ÿ’ง 4-5 cups Water


Instructions

1- Sautรฉ Aromatics:

  • In a large stainless steel pot with a glass lid, heat 3-4 tablespoons of Moro Organic Olive Oil.
  • Add the finely chopped onion and sautรฉ until it becomes translucent.

2- Add Garlic and Chillies:

  • Introduce the finely chopped garlic and green chillies.
  • Stir and cook for about 2 minutes.

3- Brown Meat:

  • Add the mutton pieces.
  • Stir occasionally and cook until the meatโ€™s juices evaporate and the olive oil begins to separate from the mixture.

4- Incorporate Spices:

  • Add coriander powder, turmeric powder, paprika powder, and salt.
  • Stir to coat the meat evenly with the spices.

5- Add Half Herbs:

  • Stir in half the chopped parsley and coriander leaves to the mixture.

6- Cook Tomatoes:

  • Add the chopped tomatoes.
  • Cook until the tomatoes soften and the mixture thickens slightly.

7- Add Tomato Paste:

  • Stir in the tomato paste and cook over a low-medium flame until well incorporated.

8- Add Water and Boil:

  • Pour in the water and bring the mixture to a boil.

9- Add Orzo Pasta:

  • Once boiling, add the orzo pasta.
  • Stir immediately to prevent clumping. Cover the pot and allow to boil for 10-15 minutes, until the pasta is tender.

10- Finish with Herbs:
- Before serving, add the remaining parsley and coriander for a fresh, vibrant finish.

11- Serve:
- Pour the hot soup into a ceramic serving bowl.
- Pair it with crusty bread for a complete meal.
