Ingredients

🥨 1 pound Polish Kielbasa (brand unspecified)
🥕 2 large carrots, julienned
🧅 2 medium onions, sliced
🧄 4 cloves garlic, minced
🌶️ 1 dried Chocolate Moruga pepper, chopped
🌶️ 1 dried Carolina Reaper pepper, chopped
🧂 2 tablespoons salt, generic brand
🍬 2 tablespoons sugar, generic brand
🌿 4 bay leaves

Instructions

1- Prepare the Vegetables:

2- Make the Pickling Brine:

  • In a small stainless steel pot, combine 2 cups of water with salt, sugar, bay leaves, and black peppercorns.
  • Bring the mixture to a simmer over medium heat, stirring until the salt and sugar dissolve completely.
  • Remove the pot from heat and allow the brine to cool completely.

3- Prepare the Sausages:

  • Slice the Polish Kielbasa into desired portions. For a traditional touch, split some sausages lengthwise if desired.

4- Layer Ingredients in Jar:

  • In a large, clean Mt. Olive Kosher Dill glass jar, start layering the sliced sausages with prepared vegetables, alternating between each layer.

5- Add Brine:

  • Pour the cooled pickling brine over the layered ingredients in the jar, ensuring all contents are fully submerged.

6- Seal and Refrigerate:

  • Seal the jar and place it in the refrigerator, allowing the sausages and vegetables to pickle for 7 to 14 days.

7- Serve:

  • After the pickling period, your Utopenci is ready to be enjoyed. Serve cold as an appetizer or bar snack.
