Looks amazing. As to the frozen fresh-caught salmon, I once met a grad student who put himself through is bachelors degree by spending time fishing for salmon in his father's boats. He flash froze the fish, then gave samples to restaurants in New Orleans and told them to compare to the fresh farmed salmon. Most ended up buying his frozen because it was just so much better than the fresh farmed.
