I don't think I have ever thought about that. But it clearly depends on the instrument. If it doesn't rely on gravity (like most string instruments that rely on string tension) then they should work fine. A guitar for instance should work. But something like a piano that has the hammers that rise and fall... if it is gravity that makes the hammers fall... they won't work and you'd just be waiting for the hammer to fall. So, I think most would work, but a select few would not.
