The trees are only tapped once a year. The tap remains in the tree for about 6 weeks and whenever the right conditions prevail sap will run.

We're supposed to get a week of good weather for sap to run. With a little luck we should be able to cook one more batch this year. Now that I've got a new hydrometer, I should be able to get the baume reading that is needed which will ensure that crystals don't form.
