Yes, it will last a long time. I open my jars every day for lunch. Once you start getting in the habit of eating it you will go through it fairly quickly. Have fun.

You should definitely make some Mike, it is so simple. I do 1 Tablespoon of sea salt dissolved into 1 quart of distilled water. Do not use tap water. Make sure your veggies are clean and your jar too.
