You'll never get a consensus and probably not many suggestions either. At least that's what I found when organizing these things. No one wants to make a choice, they'd rather just say yes or no to something already planned.

That's how I organized the first one. I asked and got only vague, "I'd do something..." answers, so I just booked a trip for myself and then told everyone we were having a meetup, even if it just ended up me meeting myself there xD

It's hard though because you have to book something you want to do regardless if people show up or not, which is not really what you're trying to do.
