Last week at work it was time to make lemonade. The weather's been quite warm here the past few weeks so I bought a case of 115 lemons. This costs about $50, in case you're wondering.
It's good to be organized when you are cooking/making food. This is especially true when you are doing high volume. So I got my cutting board, knife, bus tub to put the cut lemons in, and the star of the show, the lemons. Now I can cut the whole damn case without a problem.
Got them all cut in about 8 minutes, but who's counting ;)
Now time to pull out the juicer. I didn't get a snap of the whole unit but it's a manual, 3 pinion juicer and if you juice citrus on a regular basis I highly recommend picking one up. Simple design, easy to use and easy to clean.
The juicing took about three times as long as the cutting.
Done now, and though you can't tell from the picture, everything is sticky as shit xD
The recipe for lemonade is pretty straight forward. Equal parts lemon juice, sugar, and water.
This case of lemon made about 1.25 gallons of juice, so we'll put the same amount of water and measure the same amount of sugar, by volume.
A key part of making juice with granulated sugar is to melt the granules of sugar in warm water. Yes, you can just add everything together cold and stir and stir and most of the sugar will get incorporated but no matter how much you stir there will always be some gains of sugar at the bottom of the container.
There is also no need to boil the water or heat it super hot. I just turned the heat on high and stirred for a minute or two and by the time the water was lukewarm (about body temperature) all the sugar was melted.
