Chicken and catshoes is one of my favourite meals!
....plus pretty much you've mentioned...even the sprouts which here in the UK are generally boiled until they evaporate. I worked in Bethesda a few years ago and was delighted with the sprouts on the hotel menu and they had form and flavour.
I've not used our smoker for about a year as ... well it produces smoke which seems to annoy the neighbours. We're surrounded by the buggers here and I wish they would all move out. The gas grill has had plenty of use though and had to stock up on gas this week. I've been enjoying grilled vegetables and fish as I'm trying to balance things out a bit; I've been a massive meat eater recently. I'm amazed how beautiful grilled vegetables can be and also how versatile. I grilled a batch from the farm shop and have curried some, some will go in passata to make a pasta sauce and the others straight of the grill with olive oil. Aubergine is turning into my new most favourite thing.
