Radish sprouts contain significant concentrations of glucosinolates, isothiocyanates and phenolic compounds, just like radish root but in larger proportions. Among the glucosinolates present in radish, the 4 main ones are glucoraphenin, dehydroerucin (present in majority), glucobrassicine and glucoérucine.
