Afternoon everyone …..
I know that not everyone celebrates Thanksgiving that is going to read this post. But you can play along with the rest of us that do celebrate it.
Thanksgiving is the biggest food holiday in the world. There are more than 1.4 million pounds of Turkey consumed on Thanksgiving in just the United States.
It’s a time to be with family and friends and enjoy an excellent home cooked meal.
I’ve been cooking since five o’clock this morning. It’s mainly because I only have one oven and most of my items require the oven.
I started with deserts. My buddy and his family went apple picking last weekend in upstate New York. Then brought me a bunch of Granny Smith and Honeycrisp apples. They are both my favorite apples for baking. They don’t turn to mush when you cook them.
Here is my apple pie….
I don’t personally like pumpkin pie, and don’t want any leftover pumpkin pie in my house. So I decided to make a few personal sized pumpkin pies. Whatever isn’t eaten will leave with the guests.
I’m in the middle of making my stuffing, so no pictures. I make it all from scratch. I cube up a fresh loaf of bread from the bakery, I fry up fresh sage leaves in a little oil and butter. I put all the bread cubes in a big bowl, I break up the sage leaves add a few other spices and mix it together and bake it to dry it out. I then micro dice up some celery and onion, add that to a sauté pan and add some breakfast sausage to brown it. Once both the bread and sausage mix are done, they get combined and I add a quart of chicken bone broth and mix it together by hand. It then gets baked for 30 minutes in the oven.
Turkey is going in the oven now.
The rest of the fixings will be mashed Yukon gold potatoes, sautéed asparagus in garlic and olive oil, steamed baby carrots, fresh made gravy and homemade biscuits.
Hope everyone has a great Thanksgiving.
