Sometimes I like to brighten up our standard breakfast. Incorporating spinach and tomatoes to any meal adds a colorful visual element. So, I've taken to calling any meal I add spinach and tomato to a Fiesta version of that meal. In this case the normal migas (fried corn tortilla scrambled with onion and eggs) became Fiesta Migas!
My family loves it and of course for me the bonus is they are also getting some added nutrients because of the spinach and tomato addition.
