Depends on the transaction. Some people will skin their flesh like you would a fish with a filet knife. There are folks who sell quarters of "lamb", "chicken"' or "beef". This can vary in amounts from a full quarter(whole limb) to a half quarter or by poundage depending on the dealer. There are whole body transactions. Some willingly give freely for picnics or sell out of need. Price depends on quality, age, and health of meat.
