Yes, I was also quite interested to see saffron growing there. If one was motivated I suppose one could make a fair bit of money growing it. Certainly you won't find much competition around here!
There are two issues with food moving forward. One is our ability to buy it when the world goes vax pass crazy. And the other is our ability to grow it during this period of climate change as we lead into the grand solar minimum. Even here in the mountains we are being told that our water supply is almost run out due to lack of rain this year. Three villages not far from us currently have no water at all and if it doesn't rain soon, we can expect the same. A challenge I am rather looking forward to! But not too many people here will see it like that. The end result of this climate change is less food to go round and higher prices. Combine this with inflation and life certainly won't be easy for those who are not producing their own in a way which remains unaffected by the changing weather.
