I always thought it WILD that Americans just grew pumpkins for Halloween and competitions and not for eating! Here in Australia we've always had good cooking pumpkins, and they've always been in our dinners, vegetarian or not. Roast pumpkin is a staple vegetable! And you must try roasting the pumpkin before it goes in soup - it's just sweeter and more flavourful.
