You don't need to copy the environment. Here's the environment that I use though.

DKR_RUN_BIN=hived
DOCKER_NAME=witness
PORTS=8090,8091,2001
SHM_DIR=/root/hive-docker/data/shm

Try again with this config. There was also a PR pulled in 2 days after your post(I think I poked someguy after I saw this post https://github.com/Someguy123/hive-docker/commit/51580c7fa0daa55cb0e19ded1384c8d5cd2b82a0) which fixes the old environment setting stuff to steem.
