i can teach a thing or two about photoshop and illustrator if you want, (not a great teacher, but just offering) it's a complex app, but once you know your way around it, you'll find it less intimidating. i personally like using canva as well because it's user friendly and it gets the task done and broader range. i like your practice of doing a lot of cover photos as well to choose from, i can relate hahaha
