Oh my gosh... Lychee and pomelo kombucha sounds lush!! I make Mango and Lychee Kombucha here at home, and just love it. I have to say I have Scoby envy, your scoby looks beautiful (so massive!!), My scoby was a tiny little flap cut off from my friend's big scoby, and weirdly it just never grew into a disc, but it still makes lovely Kombucha, so I don't complain.

I love the idea of rehabilitating the soil with scoby though <3
