Ingredients

🫒 Olive Oil: For brushing the baking tray
🥔 8 pre-cooked Potato Farls, triangular slices
🥓 16 slices of homemade Back Bacon, baked
⚫️ 8 slices of homemade Black Pudding
🌭 8 pre-cooked Pork Sausages, halved
🍞 8 pieces of pre-cooked Soda Bread, with jam jar indentation
🍅 16-24 halves of roasted Tomatoes
🍄 Sautéed Mushrooms, whole or quartered
🥚 8 large Vital Farms Pasture Raised Eggs
🌿 Fresh Parsley, small sprig for garnish
🫘 Baked Beans, optional, served on the side


Instructions

1- Preparation:

  • Ensure all components (potato farls, bacon, black pudding, sausages, soda bread, tomatoes, and mushrooms) are pre-cooked.

2- Tray Assembly:

  • Preheat oven to 350°F (175°C).
  • Generously oil a large rectangular stainless steel baking tray using a red silicone brush.
  • Arrange the 8 potato farls evenly on the tray.
  • Place two slices of back bacon on each potato farl.
  • Top bacon with a slice of black pudding.
  • Position half-sausages on either side of each farl.
  • Place soda bread with jam jar indentation on each portion.
  • Tuck tomato halves under assembled portions and fill tray gaps with sautéed mushrooms.

3- Warming:

  • Place the tray in the oven for approximately 30 minutes.

4- Egg Preparation:

  • Concurrently, fry the eggs using a slotted spatula with a silver/grey handle, to preferred doneness: over easy, medium, or hard.

5- Final Assembly:

  • Remove the tray from the oven.
  • Top each soda bread piece with a fried egg.
  • Garnish the tray's center with fresh parsley.

6- Serving:

  • Use a slotted spatula to transfer each portion onto a white, square-ish plate.
  • Add extra mushrooms or serve baked beans on the side.
  • Enjoy with a cup of hot tea.
