Instructions
1- Prepare the Dough:
- In a large mixing bowl, combine the all-purpose flour and salt.
- Slowly add the extra virgin olive oil and lukewarm water, mixing continuously until a smooth dough forms.
- Knead the dough on a lightly floured surface for about 5-7 minutes, until it becomes soft and elastic.
- Divide the dough into small balls, each about 50-60g. Cover with a damp cloth and let rest for 30 minutes.
2- Prepare the Cheese Filling:
- In a separate bowl, crumble the mizithra or goat cheese, ensuring it is smooth and free of lumps.
3- Assemble the Pies:
- Take one dough ball and roll it out into a thin circle approximately 20 cm in diameter using a rolling pin.
- Place a generous tablespoon of cheese filling in the center of the dough circle.
- Fold the dough edges over the cheese and gently flatten the pie with your hands or a rolling pin.
4- Cook the Sfakian Pies:
- Heat a non-stick skillet or traditional Cretan griddle e.g., Lodge Cast Iron over medium heat.
- Place the assembled pie on the hot skillet and cook for about 2-3 minutes on each side, or until golden brown and cooked through.
- Repeat with the remaining dough and filling.
5- Serve:
- Drizzle each warm pie with honey before serving.
