🥯 800 grams full-fat Greek yogurt 10% fat, ΣΑΒΟΪΔΑΚΗΣ (Savoidakis)
🌿 400 grams mastic paste, ΣΑΡΑΝΤΗΣ (Sarantis) ΜΑΣΤΙΧΑ (Mastiha)
🥜 250 grams salted pistachios, shelled
Instructions
1- Prepare Your Equipment:
- Ensure your cream fresh and mixing bowl are chilled. This helps the cream to thicken properly.
2- Beat the Cream:
- Pour the 800 ml of cream fresh into the cold stainless steel mixing bowl.
- Use a whisk to beat the cream until it just starts to thicken.
3- Mix the Yogurt and Mastic:
- Add the 800 grams of full-fat Greek yogurt to the thickened cream in the mixing bowl.
- Add the 400 grams of mastic paste. Use an immersion blender to combine these ingredients until you achieve a smooth, creamy, and slightly elastic consistency.
4- Incorporate the Pistachios:
- Pour the ice cream mixture into a freezer-safe container.
- Stir in the 250 grams of shelled pistachios evenly.
5- Freeze:
- Cover the container with a lid and freeze the mixture overnight or for at least 8 hours.
6- Serve:
- Once frozen, scoop the ice cream and enjoy its creamy, stretchy texture.
