Yes, if you soak the couscous in water below about 46° degrees Celsius, it would still be considered raw. But many raw foodies also avoid grains as well as pseudo grains so that you often see raw versions

Oh yes, you peel them first and then freeze them. If you want to make it easier later, you can already cut them into about four pieces before freezing them. If you freeze them with the peel, it is not

Well, sapote is certainly very special in its taste. But you can make nicecream with many other great fruits like mango or berries! Here is a great post about nicecream including directions ;)
