If there's one dish I could stay loyal to for life, it would definitely be Batchoy, a popular Filipino noodle soup that originated in Iloilo City. It is made with egg noodles, rich pork broth, sliced meat, pork innards, crushed chicharon, and topped with fresh spring onions. It may look like a simple bowl of noodles, but for me, it's packed with flavor and warmth.
Whenever someone asks where I want to eat, Batchoy is almost always my answer. I never get tired of it. I love the rich broth, the chewy noodles, and the crunchy chicharon on top. Every spoonful is satisfying, especially when it's served hot on a rainy day.
More than the taste, Batchoy reminds me of the people I share it with. Some of my favorite memories were made over a bowl of Batchoy with family and friends. We would laugh, tell stories, and enjoy each other's company without worrying about the time. Those simple moments are what make the dish even more meaningful to me.
I enjoy trying different kinds of food, but Batchoy is the one I always look forward to. It doesn't have to be from an expensive restaurant. As long as it's cooked well and shared with people I care about, it's enough to make my day.
