going to try building a song to match the cover art instead of vice versa

Thats an interesting alternative way to compose music. I suppose, this happens quite a lot in the movie business. The movie is shot, and the composer need to add music to the scenes. I can imagine this is also the case for Gaming music. Cant think of a game designer who takes some cool music and designs a Game for it :)
