I like your method of composting and it looks like you get marvelous rich soil from your efforts. I think I'll try that in the summer. In the winter I put all my veggie scraps on the garden beds of the uncovered hoop houses. With the freezing and thawing that occurs, by spring it has broken down pretty good and anything that hasn't broken down I rake of to the side of the garden that borders the forest edge to let it finish breaking down there.
