Hmmm, I don't have celiac or gluten intolerance, I have a straight wheat allergy. HOWEVER it seems to be similar to rice in that I was told specifically to eat white rice and not brown rice because the allergen is in the husk (in the case of rice, it's because I'm allergic to nickel and have to follow a low nickel diet, but the wheat allergy tests by itself as positive in addition to being on the low nickel no-no list): I can get away with eating white flour products without rashing but wheat flour immediately sets me off (I tried sprouted wheat from the store and it still happened). So I figured it was in the bran, like it's in the husk of the rice. But I wonder if sourdough would work, if it works for celiacs too. Interesting!
