People move their STEEM to the exchanges, but we don't know if they sell their tokens or just hold them on an exchange. Maybe they use it to set a limit order at a higher price. We don't know, but for every seller there is also a buyer. The buyers also seem to hold their STEEM on the exchanges so I think you're right that more people are interested in trading and speculating.
