@plantstoplanks, it did come out creamy but the next day I had to let it sit out for about 15 or 20 minutes. Hubby said it is the best ice cream yet.

Me too, I love coconut. I use coconut milk, cream, sugar, shredded, flaked, or just raw out of the shell.

@vibesforlife, your beans and rice look delicious. It is amazing that most cultures have a bean and rice dish. With the beans, it is all about the seasonings. I love beans but only eat them occasionally

That paella looks so good. I love paella but I have never tried to make it at home. When I was in Barcelona, one of tours involved a cooking class where they made different versions of paella. I had forgotten

Thank you @plantstoplanks, it does TASTE better than the dairy whipped cream. I went out and bought some more coconut cream to use this same recipe to make some ice cream.
