Yes, in the spring they harvest the bamboo shoots when it has just started to grow, usually still underground. At that point it's still possible to eat it, and it's around 30-45cm top to bottom, but a few days or a week later, it'll be 2 meters tall and far too tough to eat or digest. It's a pretty incredible plant!
