Hello everyone. How are you today? I hope all is well with you and your family. I'm still gradually planting vegetables in my home garden when I'm at home and have free time. Some vegetables are growing and can be harvested for cooking continuously. But I often plant new vegetables to prepare replace old ones, even if they are already producing fruit and they can be harvested for a long time. One of them is purple eggplant. Now there are three purple eggplant plants in the garden that can be harvested and used for cooking. I plant these purple eggplant from seeds several months ago. That time I planted them in plastic baskets using about 8 seeds. But it germinate from seeds and only 3 plants grew. Now my wife can harvest over 50 purple eggplants from three purple eggplant plants for cooking.

It's a delicious vegetable and can be used as an ingredient in many dishes. So I planted purple eggplants for the second time almost 2 months ago. The second planting of eggplant. I planted purple eggplants in plastic baskets using about 8 seeds like the first time. But there are only tree purple eggplant seeds have germinate from the seeds. And two weeks ago I moved them into the ground.

Although the eggplant plants I plant for the second time are still not large enough to be harvested for cooking. But I'm gradually planting purple eggplants again. This is the third time I've plant purple eggplants. I still planted purple eggplants in plastic baskets using about 8 seeds like the every time. But right now only four purple eggplant seeds have germinate from the seeds, and they're growing into seedlings, each with 3-4 leaves.

Purple eggplants can be used as an ingredient with other vegetables in my home garden. Dishes that use purple eggplant as an ingredient include stir-fried with oyster sauce, stir-fried with curry paste, boiled, eaten fresh purple eggplant with spicy dip or crispy fried. But my wife like stir-fried eggplant with curry paste, and it's a favorite dish for us. This dish is spicy stir-fried eggplant with minced pork. It can added other vegetables as ingredients as well, but this time she added bitter melon and basil. They were harvested from my garden too.

Additionally, my wife also uses purple eggplants as an ingredient in a stir-fry with oyster sauce for our son. It can added other vegetables as ingredients as well. She added carrots, mushrooms and Luffa cylindrical. But there is only Luffa cylindrical that she harvested from the garden.
