De la dulcería criolla oriental, una de las meriendas preferida por grandes y chicos la representan los "Coquitos". Vistosas bolitas de coco pintadas de colores, verde, amarillo, azul, morado, son muchos los tonos en los que se pueden encontrar, pero sin duda alguna los rojos y rosados tienen algo especial, como dijera un niño que un día esperaba ansioso mientras su papá compraba unos coquitos para él :" los rojitos son mas sabrositos". Sin mas que agregar aquí les comparto esta dulce receta.

Ingredientes:

  • 2 coco secos medianos
  • 1/2 kg de azúcar blanca
  • 1 tz de agua
  • 1/2 cdta de vainilla blanca
  • Colorante en polvo (cantidad necesaria)

Preparación:

Para elaborar los coquitos se deben picar los cocos, extraer su pulpa, pelarla y rayarla por el lado fino (por donde solemos rayar el queso). Posteriormente colocamos esa pulpa en una olla de fondo grueso, junto con el azúcar, el agua y la vainilla, llevamos a la hornilla a fuego medio hasta que empiece a hervir, luego bajamos la intensidad a fuego lento y removemos constantemente con paleta de madera para que no se peque; este proceso tardará 1 hora aproximadamente. Cuando ya se ve un mezcla compacta, pero no seca, que se despega del fondo de la olla, agregamos el colorante, removiendo bien hasta unificar, apagamos y servimos rapidamente en un recipiente que soporte el calor. Esperamos que enfríe un poco y formamos bolitas.

Si los deseas de varios colores divides la mezcla y agregas los colorantes de tu preferencia.

Es importante que los cocos estén secos, pues cuando están "tiernos" o "zarazos" es muy difícil que puedan compactar nuestras bolitas.

Ingredients:

  • 2 medium dried coconut
  • 1/2 kg of white sugar
  • 1 cup of water
  • 1/2 tsp white vanilla
  • Powder dye (amount needed)

Preparation:

To make the coconuts, you must chop the coconuts, extract their pulp, peel it and scratch it on the fine side (where we usually scratch the cheese). Later we put that pulp in a thick-bottomed pot, along with the sugar, the water and the vanilla, we take the burner over medium heat until it begins to boil, then we lower the intensity over low heat and stir constantly with a wooden palette to do not sin; This process will take approximately 1 hour. When you see a compact mixture, but not dry, which peels off the bottom of the pot, we add the coloring, stirring well until unified, turn off and serve quickly in a container that withstands heat. We wait for it to cool down a bit and form balls.

If you want various colors, divide the mixture and add the colorants of your choice.

It is important that the coconuts are dry, because when they are "tender" or "zazos" it is very difficult for them to compact our balls.
