Hello friends of HIVE!! How are they? We start this beautiful month of July and I hope that with many things to tell on the platform. Today I bring you a very Argentine recipe, but above all inherited from the Italians: POTATO GOGGLES WITH BOLOGNESE SAUCE, or shorter GOCCES WITH SAUCE. A couple of days ago we made it at home and I wanted to share my recipe with you!
I tell you that the ÑOQUIS or "gnocchi" are some "balls" of potato and flour, they can also be made with other ingredients such as spinach, chard, ricotta, pumpkin, semolina or simply just flour and water as they were made at the time of the Romans and Greeks; They can be eaten with a little butter and cheese, or you can add a sauce. Each region was adapting the dish according to what they had at the time, that is why it is so versatile that it is not made in just one way, and now I will tell you about mine. But first, I will tell you that there is a tradition behind this plate, since in my country it is customary to place a bill under the plate to attract prosperity for the following month. But there are two versions of this custom.
A story says that a young doctor named PANTALEÓN who came from Nicomedia, Asia Minor, after converting to Christianity began to visit different places in the Italian peninsula doing miraculous cures. In one of his trips, he asks for food from some Venetian peasants who did not hesitate to invite him to eat what little they had on their table. The latter, in gratitude for his gesture, blessed them by giving them his word that they would have many months of good fishing and abundant food. The prophecy was fulfilled and many other miracles more. In honor of what happened, he began to eat what they had on the message that day, gnocchi. Years later he was canonized and today he is known as San Pantaleón.
History says that that day was July 29, and that is why this tradition is celebrated on the 29th, because when they lifted the plates from the table, they found gold coins, prosperity had already arrived. But there is another version, which says that as this is an inexpensive dish, at the end of the month, families with few resources chose to make gnocchi since it is a satisfying food. And since in this region of South America there was a lot of flow of Italian immigrants, and that is where this dish became more popular, and they say that the 29 families gathered to eat and the wealthiest passed a bill or coin under the plate. to the less well-off so that they can finish the month. A beautiful gesture!
The tradition was passed from generation to generation and every 29th many families in the southern cone put a plate of gnocchi on their tables with a bill underneath to attract prosperity.
As for my experience, I tell you that my grandmother Josefina came to Argentina when she was just 9 years old, and she came from Savona, Osiglia, Italy, and with her she brought many recipes from her country, among them the exquisite pastas and sauces. I thank God for having given me the years that I shared with her to learn a little about her roots and to be able to replicate it in my daily life, wherever I am I know that he guides me, takes care of me and accompanies me on my way.

Hola amigos de HIVE!! ¿Cómo están? Arrancamos este hermoso mes de Julio y espero que con muchas cosas por contar en la plataforma. El día de hoy les traigo una receta muy Argentina, pero sobre todo heredada de los Italianos: ÑOQUIS DE PAPA CON SALSA BOLOGNESA, o más corto ÑOQUIS CON SALSA. Hace un par de días hicimos en casa y quería compartirles mi receta!
Les cuento que los ÑOQUIS o "gnocchi" son unas "bolitas" de papa y harina, también se pueden elaborar con otros ingredientes como espinaca, acelga, ricota, calabaza, sémola o simplemente sólo de harina y agua como los hacían en la época de los Romanos y Griegos; que se pueden comer con un poco de manteca y queso, o se le puede agregar alguna salsa. Cada región fue adaptando el plato de acuerdo a lo que tenían en el momento, por eso es tan versátil que no se hace de una sola manera, y yo ahora te cuento la mía. Pero antes, te cuento que existe una tradición detrás de este plato, ya que en mi país se acostumbra colocar un billete debajo del plato para atraer prosperidad para el siguiente mes. Pero existen dos versiones de esta costumbre.
Una historia dice que un joven médico llamado PANTALEÓN que venía de Nicomedia, Asia Menor, luego de convertirse al cristianismo comenzó a recorrer diferentes lugares de la península Itálica haciendo curaciones milagrosas. En uno de sus viajes, le pide comida a unos campesinos vénetos que no dudaron en invitarlo a comer lo poco que tenían en su mesa. Éste en agradecimiento a su gesto, los bendijo dándoles su palabra de que tendrían muchos meses de buena pesca y abundante comida. La profecía se cumplió y muchos otros milagros más. En honor a lo acontecido se comenzó a comer lo que ese día tenían en la mensa, ñoquis. Años después lo canonizaran y hoy se lo conoce como San Pantaleón.
Dice la historia que ese día era un 29 de julio, y por eso los 29 se celebra esta tradición, porque cuando levantaron los platos de la mesa, encontraron monedas de oro, la prosperidad ya había llegado. Pero existe otra versión, que dice que al ser este un plato económico, a fin de mes, las familias que tenían pocos recursos optaban por hacer ñoquis ya que es un alimento que satisface. Y como en esta región de Sudamérica hubo mucho flujo de inmigrantes italianos, y es ahí donde se hizo más popular este plato, y dicen que los 29 se reunían las familias a comer y los más pudientes le pasaban un billete o moneda por debajo del plato a los menos pudientes para que éstos puedan terminar el mes. Un hermoso gesto!
La tradición se pasó de generación en generación y cada 29 muchas familias del cono sur ponen en sus mesas un plato de ñoquis con un billete debajo para atraer prosperidad.
Por lo que respecta a mi experiencia, les cuento que mi abuela Josefina llegó a Argentina con apenas 9 años, y vino desde Savona, Osiglia, Italia, y con ella trajo muchas recetas de su país, entre ellas las exquisitas pastas y salsas. Agradezco a Dios haberme dado los años que compartí con ella para aprender un poco de sus raíces y poder replicarlo en mi vida cotidiana, esté donde esté sé que me guía, me cuida y me acompaña en mi camino.
