Triglycerides fats, are formed from the combination of glycerol and three fatty acid molecules. Triglycerides are formed through dehydration reactions. Another word for triglyceride is triacylglycerol.

Triglyceride

A lipid, an ester of glycerol and three fatty acids; the major constituent of animal and vegetable fats.

Fatty Acid

Any of a class of aliphatic carboxylic acids, of general formula CnH2n+1COOH, that occur combined with glycerol as animal vegetable oils and fats.

Only those with an even number of carbon atoms are normally found in natural fats.

The above general formula applies to the saturated fatty acids. Remove 2 hydrogen atoms for an unsaturated fatty acid, and 2 hydrogen atoms for every double bond in a polyunsaturated fatty acid.

Acyl

Any of class of organic radicals, RCO-, formed by the removal of a hydroxyl group from a carboxylic acid.

Hydroxyl

A univalent radical or functional group (–OH) in organic chemistry; present in alcohols, phenols, carboxylic acids.

Carboxyl

A univalent functional group consisting of a carbonyl and a hydroxyl functional group (-CO.OH); characteristic of carboxylic acids.
