i tried the fermentation chemicals of SCOBY, and the ions of CHON.

its a fine balance between acid & ackline.

too much mineral salts inhibits fermentation, just a little goes a long way.

once the taste goes bad, its going the wrong way.. dilute with more water, add more vinegar & sugar.

the acid/mineral ions seem to be more powerful then just fermentation chemicals alone.
