I've come to realize that it's always better to set goals that are in your control, like these ones above.

Setting goals based on outcomes will usually lead to disappointment since you can't control outcomes. What you can control is how much effort you put in.

I am also setting up some goals for myself to create more/better content for my channel.

I can't control the amount of subscribers I get, but I can control how much effort I put into my content.
