Hey @chappertron, thank you for taking the time to read it. And yeah, it was probably because of that - intestinal flora has always been part of us since before we were Homo Sapiens, the elements required for fermentation have always been inside us.

That just made me picture our ancestors being unwillingly drunk all the time before we developed the ability to produce ADH.
