I eat every edible green leafy vegetables there is except for the healthy Moringa leaves. Moringa is called Malunggay here in the Philippines and it is one of the healthiest leafy vegetables in the world, a claim that is backed by science. In fact, here in the Philippines, when kids suffer malnutrition they are fed Malunggay in their meals. It's a Filipino favorite, it is known all over the Middle East and in Hawaii that if you see a Moringa plant by the front lawn of a house or on the sides of the fence, then that means there is a Filipino in that household. Fun fact. Filipinos love Malunggay but unfortunately, I do not share the same sentiment. I hate this ever since I was little because I was fed with Moringa that left a bitter aftertaste. According to people, that happens when the leaves are not fresh from being picked from the Moringa tree. If you leave it for a day before you cook the leaves then it will have that bitterness.

Today, I finally tried and loved the taste of this vegetable. My daughter experimented on stir-frying it with cornstarch and egg batter. Boy, it tastes so good. I feels like chips because of the crunch but I love everything about it. It's our afternoon snack for today or our meryenda. I could not believe that I would enjoy Moringa leaves this way! I am so happy because I am surprised and of course, I am impressed with my daughter's cooking skills. I hope this is still healthy even if this is fried.
