Ingredients

🥫 15 oz can chickpeas, drained & rinsed
🥫 15 oz can butter beans, drained & rinsed
🥒 5 small cucumbers, diced
🌶️ 2 large red bell peppers, diced
🥬 ½ head green cabbage, sliced thinly then diced
🧅 ¼-½ red onion, minced

🥥 13.5 oz can full-fat coconut milk
🥬 1 bunch cilantro
🌿 1 bunch basil
🌶️ 1 serrano pepper
🐟 3 tbsp fish sauce
🍯 2 tbsp brown sugar
🍋 Zest and juice from 1-2 limes
🧂 1 tsp salt


Instructions

1- Prepare Salad Vegetables:

  • Dice the cucumbers and red bell peppers.
  • Transfer them to a large wooden mixing bowl.
  • Drain and rinse the chickpeas and butter beans.
  • Add them to the bowl with the diced vegetables.
  • Mince the red onion and add to the bowl.
  • Slice the green cabbage thinly, then dice it, and place it in the bowl.

2- Prepare the Creamy Thai Coconut Dressing:

  • Add cilantro, basil, and serrano pepper to a Vitamix blender.
  • Pour in the full-fat coconut milk.
  • Add fish sauce, brown sugar, lime zest, juice, and salt to the blender.
  • Blend until the dressing is smooth and bright green.
  • Pour the prepared dressing into a separate glass bowl.

3- Assemble the Salad:

  • Pour the prepared green dressing over all the salad ingredients in the large wooden bowl.
  • Using gloved hands, thoroughly mix the ingredients until all are evenly coated with the dressing.

4- Store:

  • Transfer the mixed salad into airtight meal prep containers.
  • Seal with a blue-lid.
