Looking for snack options for my kids that would also go a long way, I walked up and down the entire aisle of snacks and sweet cookies, comparing prices and the amount per package, while also taking my kids’ tastes into account.
And since their opinions on snacks are so all over the place, I decided to buy a Maizena brand chocolate cake mix that we hadn’t tried before. In fact, for me, that name was exclusively associated with the atol we used to be given as kids or with its use as a thickener in certain dishes, so when I saw the package, I decided to give it a try.
Unlike other similar products, this one calls for 4 eggs instead of 3, and honestly, I recommend following the recipe on the package to the letter—even though it might seem like a lot of eggs for the amount of batter, the result shows that it’s just right.
In a bowl, I added the mix powder, followed by the oil, eggs, and milk, then stirred everything together with a spoon until all the ingredients were well combined. Meanwhile, I had already preheated the oven to low heat and floured the baking sheet to pour the batter onto before baking.
According to the instructions, I was supposed to bake it for almost an hour on low heat, but since I had to go to my second shift at work, I turned the temperature up to the highest setting and placed the baking sheet in the spot farthest from the heat source to compensate for the temperature change.
Since I’m not a baker (and to be honest, I’m really bad at it), I didn’t know how much less time to leave it in the oven, and even though there’s that trick of inserting a knife or a toothpick to see if it’s done, my anxiety about having to leave for work was getting the better of me.
In the end, I left it in for just 20 minutes, turned off the oven, and didn’t take it out right away—to take advantage of that last burst of heat while I finished getting ready to leave—and I have to admit that this trick worked for me, because when I cut into it, it was just right.
I ended up slicing each piece while it was still hot, telling my kids to wait a little while before serving themselves.
The good thing is that it lasted for a few days, and my kids really liked it, so it’s an option I plan to repeat, since the price is considerably lower than that of the other ready-made mixes.
