This recipe/method will work nicely with any dried beans, peas or lentils but I'm sure your vegetarians will know the mung bean. I checked online now and it is grown in Texas.
He started the first puzzle early April, first time he'd ever done one, and he did it in his spare time so I'm not sure how many hours he spent doing it but certainly kept him occupied. The one of the lions is my favourite, the colours are stunning!
