Kudos to your father in law for working in the death zone 👍. I take it he's a experienced DIYer than you. The wood ceiling adds a lot more warmth and softer touch to the room now, well worth the effort.

As to the panels, it's really difficult to say coz I think wood shades changes over time as you've noticed already. Personally I'm not too fussed with the shades. Maybe give it a few more months to see if it will grow on you, before you insist on changing it. Though I have an inkling who will end up winning 😉😜

Btw the way, love your dining chairs, the back is so beautiful. And the black leather armchair by the window. I can imagine how gorgeous it is to sit there looking out.
