Smart not to use the good blade on tough items like squash. I'll probably use the large German knife i have for that because the steel is softer so less brittle and less likely to torque on me, Crack or

This is super interesting. Im about half way now and I'll finish it a little later. Its an interesting process and history. So much work to make the steel traditionally like that. Truly an art craft.

Well, they say that its better to be cut by a sharp knife then a dull one. So there's that lol. Hopefully you weren't too hurt. Definitely have to be careful with sharpening knives though

I've never seen a samurai sword made but I loved the forge in fore show. It actually taught a lot about knife making, different steels, demascus..etc

A Japanese knife is definitely a luxury and not at all a necessity. Any decent knife that is sharp and keeps an edge is great. I justify it because its a tool that I use every single day, sometimes multiple

Some home builds are worth spending extra time on and making them perfect, usually for aesthetic reasons. Other items you just need them to do a job o spending more time then necessary to make them perfect
