Tortellini with Meat Ragout

Hello everyone. Hope you’re all having a wonderful weekend. In my case it has been very relaxing so far. I had a little anxiety these past few days but thankfully that got better. Now i’m just trying to stay calmed and simply do the things that i gotta do. What works better for me is to stay busy and not being stuck into my thoughts cause that’s where my anxiety begins. Nothing you will learn from one day to another, but something that definitely makes things easier when you start to know yourself more and start to recognize what triggers it. What works better for me when i have anxiety is to remind myself that we’re all allowed to have a bad day and that it won’t last forever.

Today i’m gonna share a post about what i had for lunch today. Cooking is for sure one of the things that make me feel more relaxed these days. A time of the day that i get to be with myself and being creative. The sky’s the limit. There are days where i have enough money to make something great, but some other times i’m short of budget but that doesn’t stop me from doing something delicious. I like to feel that i deserve to eat well and give it a nice presentation. Is all about self love.

My lunch for today was a delicious tortellini with meat ragout. I would like to share with you all how i did it. I bought the tortellinis so there’s not really much to say about that but i will take you on a step by step on how i did my meat ragout.

The first thing I did was chop the carrot, the celery and the garlic. Which we are going to fry with olive oil.

Then what i did was to add the ground beef to the pan with the fried vegetables.

I waited a few minutes until the meat looked a little darker and i started to add the condiments such as paprika powder, dehydrated onion, pepper, parsley, garlic, soy sauce, and salt. Also i incorporated 1 chicken cube but that’s optional.

After a few minutes have passed and i see the meat looks well cooked, that’s when i added the crushed tomato. Also i added a teaspoon of mustard and 1 teaspoon of sugar. Mix well at medium heat for around 5 minutes and that’s it.

After that i did the tortellinis which were stuffed with chicken and spinach. I like to add a bit of butter to my pasta once cooked cause i hate it when they stick with each other.

And that was it. That’s how i did my lunch today. Simple but tasteful.

I added some parmesan cause that’s a must have whenever i make pasta.

For drink i had a delicious homemade pineapple juice. Absolutely loved it.

Look through the window and realized it was a beautiful day so i thought why not sharing it.

I feel a little heavy whenever i have pasta so i had to take a small nap with my sweet dog Puchi.

And that was my lunch for today and part of my day. I’m constantly in the kitchen trying to create something new and fun, some other times like today i’m not really anything extraordinary but i still enjoy it and there’s always something new you learn from everything you do.
