I never sweeten orange juice! If the oranges are that sour, I would rather make a smoothie with very ripe bananas. But you wanted to know how to dissolve the honey. One idea would be to heat the water, preferably not more than 40 degrees Celsius, and then dissolve the honey in it. The honey water is then the sweetener for the juice ;-)
