Stereotypes are an extension of our categorization mechanisms. Knives tend to be sharp, so we learn not to grab them by the blade, even though there is a chance that the particular knife we are grabbing isn't sharp. Then we apply a similar process to categorizing people. Sometimes useful, sometimes counterproductive.
But running into Japanese people who don't like sushi still surprises me.
