ha ha ha... all those years ago, growing up with a mama who lived through the "Great Depression" we used "canned/evaporated" milk.
No fancy creamers for us (they didn't exist back then anyway) canned milk lasts a LONG time without spoiling.
I keep ground coffee pretty much all the time.
I only drink it in the morning; 2-3 cups max.
I'll make a "12 cup" pot of coffee (which is misleading, there are not 12 of my coffee mugs worth in that pot) toss out the grounds, and keep the remainder for 2-3 days until it's gone, before I brew another pot.
