My interest is more in the area of bushcraft knives, so it may be outside your kitchen knife scope. I know Japanese brands range from "incredibly good" to "just cashing in on orientalist mystique," and I couldn't say which is which. That broken knife is dead, but perhaps someone with experience working with metal and the proper tools could repurpose it. Turn the good part of the blade into a smaller utility knife?
