I fell in love with the healthy diet full of vegetables and fruits - especially after listening to this podcast on how the food affects survival of the patients with breast cancer. Since then, I greatly reduced meat and dairy and increased plant-based protein intake.
Two days ago I noticed a stall full of vegetables in the Marina Bay Sands food court, Rasapura Masters. It is a really fancy and nice food court, stop by when in Singapore. :)
In Southeast Asia, term yong tau foo is used to describe a dish stuffed with tofu (vegetarian food made of condensed soy milk). Yong tau foo can contain various selection of food such as fish balls, crab sticks, mushrooms, and all the different vegetables.
Places like this enable you to make your own combination of yong tau foo! You take a bowl and fill it in with ingredients you like. For 7 SGD (5 USD) choose 6 ingredients, type of noodles and choose if you like it in a soup or dry. Then, you wait for a couple of minutes so the ingredients are freshly cooked in a hot water and you are ready to enjoy this delicious meal!
I filled my bowl with the ingredients below and it was one of the healthiest and tastiest meals in my life.
After couple of days eating almost vegetarian food, rich in fruits and vegetables, I am noticing more energy and less cravings for something sweet. Being well is the key :)
