I'm from Vietnam, a country in Southeast Asia with a Wet Rice Civilization dating back thousands of years. This ancient civilization developed some 13 thousand years ago in China's Yangtze River delta and extended to India and Southeast Asia. This event is extremely significant since it gives birth to a variety of cultures, including Dong Son and Hoa Binh cultures, which were among the first to give birth to Vietnamese civilization. As a result, rice is very important to Vietnamese culture.
Nowadays, rice is still irreplaceable. Because Vietnam is still developing and becoming more of an industrial country, the size of the rice fields is shrinking. The Mekong river delta and the Hong river delta, however, are the two major rice-producing areas, producing about 90% of the total. Due to battles in the previous century, my people had the darkest period in history, with 2 million people starving and dying. Following that event, our country rose above adversity and expanded as much as possible in order to provide food for the war and the people of the country. As a result, we are currently the world's greatest rice exporter.
In the countryside, we easily can see a lot of rice fields. In the central of Viet Nam, the farmers have 3 seasons to grow rice in a year, each one needs 3 to 4 months.
Rice is the main victual in almost all meals and dishes in Viet Nam. You can eat rice with some other meat, fish... dishes - that is the normal way, or you can make Pho - our national dish from rice flour... Rice has many types too. Have you ever heard about sticky rice? There are two balance components that make up typical white rice, amylopectin and amylose. Sticky rice has very low amylose so it absorbs more water so it is heavier and more dent than normal rice after cooking. I personally love sticky rice. A bowl of sticky rice and a fried egg used to be a great breakfast in high school. We use sticky rice in many dishes too, like Banh Chung - a traditional dish in Tet holiday or five colors sticky rice dish.
