Sorrel is a cold-resistant plant. Seeds begin to germinate at 3 ° C, seedlings appear on the 8-14 day after sowing. It develops well under conditions of slight shading. In one place, sorrel is cultivated for 4-5 years, since in subsequent years yields are sharply reduced.
